Cashew Feni Preparation


Cashew feni which can be described as a fruit brandy, is unique as it is made only in Goa from ripe cashew apples. Only the ripe cashew fruits are collected and the nuts are separated from the fruits. These cashew apples are then crushed and the juice is fermented in small batches. Once the fermentation process is complete it is double distilled in small copper pots.

The first distillation gives a low alcoholic product locally called Urrak. this Urrak is subject to a second distillation again, in small copper pots, where the final distillate (Feni) is collected after separating any impurities by way of heads and tails.

This feni which has a very fruity aroma of the cashew fruit is then filtered, bottled, labeled at 42.8% alcohol/volume and stored in the excise bounded warehouses before it is sold.
